Grape variety:

Cabernet Sauvignon 70%, Cabernet Franc 30%

Cultivation Area:

Steeply southbound hillside, sandy loamy soil on porphyritic rock in Laitach near Bolzano on 350 m height above sea level

Vinification:

cold maceration for 12 days, fermentation with native yeats in steel tank with Pigeage, 4 weeks on the grapes, malolatic fermentation and maturation for 18 months in barrique barrels

Characteristics:

Color: dark ruby red
Aroma: dark berries and cassis, spicy and floral notes
Body: powerful body, elegant, tannic, spicy and complex

Yield:

45 hl/ha

Serving:

16–18°C, with red meat, venison and pot roast

Vinification:

cold maceration for 5 days, fermentation in steel tank with Pigeage, 4 weeks on the grapes, malolatic fermentation and maturation for 12 months in used barrique barrels.

Aroma: fruity like dark and red berries, spicy notes
Body: inviting on the palate with elegant tannins, juicy and drinkable

Vinification:

cold macerazion, 2 weeks fermentation on the grapes with batonage method, 100% in steel tank fermentation on fine lees

Characteristics:

Color: shiny ruby red
Aroma: sour cherry und berry
Body: rich and elegant, fine persistent tannins

Yield:

70 hl/ha

Serving:

13–15°C, suitable with appetizers, fish and meat
